Ingredients
- 4 tablespoons unsalted butter, melted, plus more, to taste, for greasing the dish
- 2 cups old-fashioned rolled oats
- 3/4 cup light brown sugar
- 1 cup walnuts or pecans, chopped, divided
- 1/2 cup raisins
- 1 teaspoon baking powder
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 2 cups milk
- 1 teaspoon vanilla extract
- 2 tart-sweet baking apples, such as Honeycrisp or Granny Smith, peeled and cut into 1/2-inch chunks
Directions
Step 1 -Preheat the oven to 325 degrees F.
Step 2 -Using the extra melted butter, grease an 8-inch or 9-inch baking dish.
Step 3 -In a medium bowl, add the oats, the brown sugar, 1/2 cup of the walnuts, the raisins, the baking powder, the cinnamon, and the salt and stir to combine.
Step 4 -In a separate bowl, add the eggs and whisk until beaten.
Step 5 -Add the milk and the vanilla to the beaten eggs and whisk until well-combined.
Step 6 -Add the milk mixture and the remaining 4 tablespoons of the melted butter to the oat mixture and stir to combine.
Step 7 -Add the apples to the bottom of the prepared baking dish, spreading them out evenly.
Step 8 -Spread the oat mixture over the top of the apple layer, making sure it is evenly distributed.
Step 9 -Sprinkle the remaining nuts on top of the oat layer.
Step 10 -Bake until the top is golden and the oats are set, about 40-45 minutes.
Step 11 -Serve warm or at room temperature.
