Trust us when we say Butterscotch Haystacks are pure delight in cookie form. Not only are they incredibly easy to throw together in a rush, but each bite is also a melty, lick-your-fingers-clean pile of goodness. The chow mein noodles that form the base are so unbelievably crunchy you can hear the earth-shattering deliciousness for miles around. But the chocolate and butterscotch mixture is where the true magic lies; the richness of the butterscotch elevates the chocolate, while the bittersweet and floral flavor of the chocolate makes the brown sugar notes of the butterscotch more enticing. Butterscotch Haystacks are the kind of dessert you'll want stacking your plate... before they suddenly disappear, that is!
Ingredients
- 2 cups semisweet chocolate chips
- 1 1/2 cups butterscotch chips
- 5 cups crispy chow mein noodles
Directions
Step 1 -Line a baking sheet with parchment paper.
Step 2 -Place the chocolate chips and the butterscotch chips in a large microwave-safe bowl.
Step 3 -Heat the chocolate and the butterscotch chips at 50% power for 1 minute.
Step 4 -Stir and continue heating the chocolate and the butterscotch for 30 second intervals, stirring between each interval, until smooth.
Step 5 -Stir in the noodles.
Step 6 -Using a spoon or tongs, drop 15 scoops of the mixture onto the prepared baking sheet.
Step 7 -Refrigerate the haystacks until set, about 10 minutes.
Step 8 -Serve.
