Classic Salisbury Steak with Mushroom Gravy

Remember when your mom would let you sit on her patterned, burnt orange velour couch while watching reruns of Scooby-Doo and eating one of those beloved TV dinners? While the health benefits of those frozen gems are questionable, it sure tasted good and made for some of the best nights, right? Well, let's bring back that nostalgia, without the ambiguous ingredients, with some Classic Salisbury Steak with Mushroom Gravy! These juicy steaks swim in a rich, savory gravy and include fixings that you can actually pronounce. And it's all ready in under 30 minutes so it almost has that frozen dinner quickness about it, too. So, go ahead! Turn on your favorite old school cartoon, grab a big, hearty plate of Classic Salisbury Steak with Mushroom Gravy, and unlock all those delicious, beloved memories!
Ingredients
- 2 pounds ground beef
- 1/2 pound ground pork
- 1 small yellow onion, diced
- 4 cloves garlic, finely minced, divided
- 2 large eggs
- 1 egg yolk
- 1 cup breadcrumbs
- 2 teaspoons Worcestershire sauce
- salt, to taste
- pepper, to taste
- 1/4 cup cooking oil
- 4 cups button mushrooms, sliced
- 2 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 4 cups beef stock
- fresh parsley, to taste, for garnish
Directions
Step 1 -In a large bowl, add the beef, the pork, the onions, 2 of the minced garlic cloves, the eggs, the egg yolk, the breadcrumbs, the Worcestershire, the salt, and the pepper and mix thoroughly.
Step 2 -Form 7-8 large patties out of the meat mixture and place them on a platter.
Step 3 -In a large frying pan over medium heat, heat the oil until it is lightly smoking, about 3-4 minutes.
Step 4 -Add the beef to the oil and cook until the beef is well-browned on each side and just about cooked through, about 4-5 minutes per side.
Step 5 -Transfer the browned patties to a clean platter.
Step 6 -Add the mushrooms to the same skillet over high heat and cook, stirring occasionally, until the mushrooms are very browned, about 10-12 minutes.
Step 7 -Move the mushrooms to one side of the pan and add the remaining garlic cloves and the butter to the other side and cook until the garlic is fragrant, about 30-45 seconds.
Step 8 -Mix the mushrooms, the butter, and the garlic together, sprinkle in the flour, and stir until the mushroom mixture is completely mixed in and combined.
Step 9 -Pour the beef stock into the mushroom mixture and cook for 10 minutes. The gravy will be thick and slightly reduced.
Step 10 -Season the gravy with the salt and the pepper.
Step 11 -Add the patties to the gravy to reheat, about 1-2 minutes.
Step 12 -Garnish the steaks with the parsley and serve.
